Raspberry Chia Goodness

You guys, the change in the weather combined with this little viral infection I had has completely messed me up. I’m so sluggish lately and I’m having the hardest time getting my life back together. I woke up at 1 p.m. on Saturday AND Sunday! Who does that at 31? This is the reason I haven’t been in front of the camera lately, but I’m hoping a new diet, a little bit of exercise and a positive attitude will turn it all around. 

So, for breakfast today, I had some chia seeds. I first started eating them about this time last year after my husband got me hooked. Chia is the Mayan word for strength and I listed all of the amazing benefits here

This is a great recipe to make at night so it’s ready in the morning - especially if you STRUGGLE to get out of bed like me. You can also easily change it up by adding different kinds of fruits and it’s very very filling. 

Enjoy!

  • 1 cup fresh raspberries plus a few extra for garnish
  • 1 pinch ground cinnamon
  • 3 tbsp chia seeds
  • 3/4 cup almond milk
  • Almond butter
  • Hemp seeds
  • Pomegranate seeds
  • Fresh mint

Mash the berries in a bowl using a fork. 

Combine cinnamon and chia seeds.

Add almond milk and mix. Set aside to soak for minimum 30 minutes or overnight in the fridge. 

Serve in a jar topped with almond butter, hemp seeds, pomegranate seeds, a few berries and mint.

To make this healthy snack, just use a juicer and throw in your favorite fruits. You can also add herbs like mint and basil to make it fancy.
